From the Meiji through the Shōwa eras, this line was often heard in Tokyo’s high-end ryotei restaurants.
The sake it referred to—Hōmon Masamune—has, for this holiday season only, been granted special permission for retail sale.

Even today, it’s served exclusively at select ryotei and luxury hotels, never found on ordinary shelves—truly a “phantom sake.”

Like the old Rolls-Royces that never flaunted their specs, saying only “sufficient and complete,” this sake reveals almost nothing about its details.
All we know is the alcohol content: 15–16%.

That’s the charm of the good old days—quiet confidence instead of data sheets.
And in an age obsessed with specs, it somehow feels refreshingly new.

Its taste lives up to its pedigree.
Created for refined cuisine, it pairs beautifully with food.

About the Brewery

This sake is brewed by Hakutaka, one of the five famed breweries of Nada Gogō.
Located along the coasts of Kobe and Nishinomiya, this region has been Japan’s top sake-producing area since the Muromachi and Edo periods.

Its secret? The famous Miyamizu water discovered in the Edo era—
hard water rich in calcium (1.5× that of ordinary water) and abundant in phosphorus and potassium,
with phosphorus levels said to reach ten times that of other brewing regions.
This remarkable water is the foundation of what’s known as “Nada no Nama-Ippon.”

Among the Nada breweries, Hakutaka holds a special distinction:
it is the only brewery entrusted to produce the “Goryōshu,”
the sacred sake offered to the deities of Ise Grand Shrine morning and evening.

Hakutaka Co., Ltd., founded in 1862 in the Nishinomiya area of the Nada-Gogō region in Hyōgo Prefecture, is one of Japan’s premier sake breweries. Utilizing Miyamizu spring water and premium Yamada-nishiki rice, the brewery remains dedicated to the traditional kimoto method of brewing, earning it the reputation of an “authentic Nada sake.” Remarkably, Hakutaka is the only brewery in Japan selected to provide sake to the Ise Jingū. Upholding the principle of “Quality First” and achieving 100% in-house production, the brewery continues to craft exceptional sake across generations.
