This is the Junmai Ginjo version of the Junmai "Misato Yoshino" which uses yeast harvested from Yoshino cherry trees that grow in Misato Town, Akita Prefecture. This Junmai Ginjo sake is brewed using natural cherry blossom yeast harvested from Yoshino cherry trees that bloom in Misato Town, Akita Prefecture, and Misato Nishiki, a cross between Yamada Nishiki and Miyamanishiki, highly regarded as rice for ginjo sake, and Egao Shimizu from the Rokugo Spring Water Group, which has been selected as one of the 100 famous waters in Japan.
It has a subtle and elegant fragrance unique to cherry blossom yeast, and a clean and delicate taste, with an elegant and refined aroma reminiscent of spring cherry blossoms filling the mouth. It has a subtle and elegant fragrance, and the refined taste of Junmai Ginjo is complemented by a gentle sweetness like cherry blossoms, resulting in a beautiful finish that evokes the four seasons of Japan.
