"Mifuku Yamahai Aged Junmai Kobo" is a gem of a product, made by carefully brewing Junmai sake using the traditional "Yamahai brewing" method that Mitokyu Sake Brewery is proud of, and then slowly aging it for over three years. By minimizing carbon filtration, we have maximized the original flavor cultivated through aging and the deep flavor unique to the Yamahai brewing method.

The sake rice used is "Ginfubuki" from Shiga Prefecture, polished to 70%. After a long period of aging, the liquid shines with the beautiful golden color of sake, but contrary to its appearance, it has a surprisingly refreshing taste. When you put it in your mouth, it has a mellow and smooth texture, along with a fragrant nuance from the aging and a rich flavor of the rice. The well-balanced acidity and richness bring the whole thing together, elevating it to an elegant taste that you will never tire of.

What is particularly appealing about this sake is that it shows a variety of different characteristics depending on the temperature. Of course, you can savor it slowly at room temperature, but gently warming it brings out the rich flavor and fullness of the rice even more, and the pleasant aroma of aging will fill your soul. In 2021, it won a gold medal in the special warm sake category at the National Warm Sake Contest, so its deliciousness when warmed is guaranteed. Even for those who are not familiar with aged sake, its clear drinkability and depth will bring new discoveries.
