This precious bottle is made using 100% "Koshi tanrei" sake rice grown in the rich nature of Myoko, Niigata Prefecture, and brewed using Kiminoi Brewery's unique traditional yet innovative "brewery-attached lactic acid bacteria brewing" method. This sake is bottled without any filtration, preserving the fresh flavor of the sake, and is pasteurized just once in the bottle, achieving both freshness and the depth of aging.
When poured into a glass, it emits the clear sparkle typical of Junmai Daiginjo, and a modest yet elegant aroma rises up. When you put it in your mouth, the first thing you feel is the strong impact of the rice's umami and rich sweetness. However, it is by no means too heavy, and the fresh and soft mouthfeel spreads with an exquisite balance of sweetness and acidity, creating a pleasant harmony.
