It is generally classified as very dry, and among our dry sakes, we have ranked it as Taisho, with a sake meter value of +15, which is the driest level. It boasts the highest level of spiciness among Otani Shuzo's dry series, and is truly worthy of the name "extremely dry."
When drinking chilled sake, the order of taste that you will feel is crisp is extra dry → very dry → very dry. It has a particularly sharp taste when drunk chilled, but because the very dry is so sharp, you will not feel the rice flavor as much when drinking chilled sake, so if you drink it warm at around 40℃, you will feel the fullness of both the taste and aroma. This is a pure rice ginjo sake with a crisp taste that is especially recommended for those who like very dry sake or who place importance on compatibility with food.

Otani Sake Brewery Co., Ltd. is a sake brewery with over 150 years of history in Kotoura Town, Tottori Prefecture. Founded in 1872, the brewery has continued to make "memorable sake" from rice cultivation to sake brewing, taking advantage of the rich natural environment at the foot of Mt. Daisen.
