Matsuoka Brewery Mikadomatsu Toramaki Black 720ml

Regular price ¥1,870 JPY

This is the first in the challenging "Tora no Maki" series, released exclusively at authorized dealers by Matsuoka Brewery with the hope that this sake will "become a sake that will lead the way in the future." The sake rice "Sake Musashi" from Saitama Prefecture is polished to 50% and carefully brewed with the ultra-hard water of the Chichibu Mountains. This hard water and the technique of long-term low-temperature fermentation give it a rich flavor that goes beyond just being dry, combining aroma and umami.

When poured into a glass, the clear sparkle of Junmai Daiginjo is accompanied by a gentle fruity citrus aroma. When you put it in your mouth, the first thing you notice is the strong, sharp taste of "very dry". However, what follows is a smooth umami flavor, a pleasant acidity, and a deep richness. The opposing elements of dryness and umami are beautifully balanced, and as you drink it, a subtle sweetness also appears, making it a sake with many different faces.

Because it is unfiltered and pasteurized once, the rich flavor of the rice is preserved, and the sharp yet complex flavor lingers. We recommend enjoying it chilled or at room temperature in a wine glass. Its excellent balance makes it a perfect accompaniment to a wide variety of cuisines, including Japanese food, and will add color to your dinner table.

Teisho Toramaki Kuro was born from challenge and innovation, overturning the conventional image of sake. It is a new masterpiece from Matsuoka Brewery that can be recommended as a delicious dry sake to a wide range of people, from sake novices to connoisseurs.
