Sankan Shuzo's pride and joy, Asahi Junmai, is a pure rice sake brewed using 100% of the rare Asahi sake rice grown in Okayama Prefecture. The rich umami and full-bodied sweetness of Asahi rice are well balanced, and the moderate acidity creates a crisp aftertaste.
This sake has a strong rice flavor, and can be enjoyed whether it is served warm or chilled. Sankanmuri Sake Brewery, founded in 1806 (Bunka 3), continues to brew sake using the traditional methods of the Bitchu Toji, the second oldest brewery after the Noto Toji.
The sake is made using the two major varieties of rice that originated in Okayama Prefecture, "Omachi" and "Asahi," and the brewing water is pure water from a source at the foot of a local mountain. This dry, mellow-tasting sake is brewed with the primary consideration of its compatibility with the seafood caught at Shimotsui Port, which has long been close to the brewery.
We will continue to be faithful to traditional local sake brewing, with a particular focus on the rice, water, and even the flavor of the local area.
