This special Junmai Daiginjo sake is made using 100% of Niigata Prefecture's signature sake-making rice variety, "Gohyakumangoku," and is carefully brewed using Kiminoi Shuzo's unique "brewery-attached lactic acid bacteria preparation" method. In order to lock in the freshly pressed flavor in the bottle, it is not filtered at all and is pasteurized only once (bottle-warming pasteurization), bringing out the natural characteristics of the rice to the fullest.
When poured into a glass, the clear transparency of Gohyakumangoku rice and the elegant aroma of Junmai Daiginjo gently rise up. When you put it in your mouth, it has a refreshing and light mouthfeel, and the full-bodied, deep flavor that is unique to brewed with lactic acid bacteria in the brewery spreads richly. The balance of sweetness and acidity is exquisite, and while it has a soft mouthfeel, it has a crisp aftertaste that leaves a pleasant lingering aftertaste.
