This is a luxurious Junmai sake made using Yamada Nishiki rice for the koji rice and Tamae rice from Tottori Prefecture, and is bottled with only the best part of the mash, called "nakadare," which flows naturally after squeezing it. The rice used is carefully polished to 50%, giving it a smooth texture and a mellow aroma that spreads throughout the mouth.

Furthermore, it is known as a sake that takes the best of both worlds, as it is made by bottling the "nakatori" part, which has the best balance of aroma and flavor, after the "arabashiri" part that comes out first when the sake is pressed. It is a dry sake with an alcohol content of 15% and a sake meter value of +3.6, and its appeal is that it can be enjoyed warm or cold with a mellow dry taste.

This is a masterpiece that highlights the traditional techniques of the Izumo Toji, a master brewer, and is a perfect mix of Yamada Nishiki and Tamae rice. It comes in a decorative box and is a popular gift item.

<Staff recommendation points>
Tottori Prefecture is a naturally rich area that is also famous for its seafood.
It has a sharp edge that cuts through the fat in meat dishes and a dry yet mellow rice flavor that goes well with seafood dishes.
