This innovative Junmai sake from Komatsu Shuzo is made using 100% Oita Prefecture's legendary sake rice "Oita Mii", polished to 60% and brewed with "white koji" used in shochu production. The refreshing, sweet and sour citrus acidity from the citric acid derived from the white koji is its greatest feature, offering a new taste sensation reminiscent of high-quality white wine.

When poured into a glass, the clear liquid gives off a fresh aroma reminiscent of grapefruit and kabosu. When you put it in your mouth, it has a soft and smooth texture, with a refreshing citrus acidity, the gentle sweetness of the rice, and a rich umami flavor that is in perfect harmony. With a low alcohol content of around 13%, it is very light and easy to drink, leading to a refreshing and crisp aftertaste.

This sake is best served chilled, on the rocks or with soda, and adding a piece of lime creates an amazingly refreshing sensation. It also works well with seafood, oysters, marinated vegetables, and other dishes that allow you to enjoy the sour and sweet flavors, as well as grilled meat and other fatty dishes, making it a reliable drink that will refresh your mouth.
