Flagship sake from the revived Tokyo brewery, Kouzuru

Noguchi Sake Brewery in Fuchu City, Tokyo, was revived in 2024 for the first time in approximately 40 years.

Their flagship product, Kokufu-tsuru Junmai Ginjo, is brewed using Omachi rice and is characterised by a fragrant, fresh profile reminiscent of just-picked fruit, with a vibrant and juicy taste.

Taking advantage of its location close to central Tokyo, Noguchi Sake Brewery promotes a brand image centred on “fresh sake,” and has developed facilities and a production environment that allow them to deliver sake with its freshly brewed vibrancy intact throughout the year.

Sake Brewery - Noguchi Sake Brewery

Address: Fuchu City, Tokyo

Noguchi Shuzoten, a sake brewery revived in fiscal year 2024 after approximately 40 years.
Driven by the conviction that Fuchu's water is ideal for sake brewing, and inspired by the historical presence of the provincial capital of Musashi Province in Fuchu, we embraced the aspiration to ‘brew sake as graceful as a crane in the land of the provincial capital.’ Consequently, upon founding, we adopted ‘Kokufu Tsuru’ as our brand name, and it has remained our flagship label ever since.
The image of the ‘crane-like sake’ we strive for is... ‘A crisp, elegant sake with refined grace and beauty, drawing out the umami of the rice to create a soft yet clean-cut, light and flavourful taste.’
