The brand name “Daijirō” embodies the vision held by the fourth-generation founder at the time of establishment: “a sake where those who grow the rice, those who sell it, and those who drink it can see each other's faces and converse”. The name “Daijirō” is also that of the founder.
The label for Daijirō uses washi paper from the social welfare organisation Ajisai-en within Shiga Prefecture. This washi paper is made using the “tame-suki” method, where each sheet is individually hand-made from kozo (paper mulberry) fibre. Each sheet of this labour-intensive washi paper, with its unique character, is carefully and preciously affixed to the bottle to complete the finish. (Excerpted from the brewery's official website)
