“Mifuku Yamahai Junmai Hiyaoroshi” is a carefully crafted junmai sake brewed using the brewery’s specialty—the traditional yamahai method. Aged over the summer and released in its ideal drinking condition, this seasonal sake offers both richness and calm depth.

The color is clear and refined, shaped gently through months of maturation. On the palate, it delivers a full, rounded umami of rice, followed by a composed acidity and a clean, pleasant finish. The mellow character and presence of rice—hallmarks of hiyaoroshi—make it a perfect match for the flavors of autumn.

Chilled, it shows an elegant balance of umami and aged aroma. At room temperature or lightly warmed, it displays even greater roundness and depth. It pairs beautifully with autumn dishes such as grilled fish, hot pot, mushrooms, cheese, and seasonal vegetables, adding warm richness to the table.

Crafted with precision using the traditional yamahai method, this hiyaoroshi expresses both serene umami and a crisp finish. A perfect seasonal bottle to welcome autumn and elevate everyday meals.

<Staff Recommendation>
Perfect for enjoying the flavors of autumn.
Its well-developed umami from maturation, combined with the depth of the traditional Yamahai brewing method, makes it an excellent match for fish dishes and mushroom-based cuisine.
