“Silent Night” captures the quiet purity of a winter evening in a single bottle. Crafted with Dewatsuru’s highly polished rice and careful low-temperature fermentation, this Junmai Daiginjo unpasteurized sake (nama) delivers crystal-clear elegance and a gentle depth of flavor reminiscent of a serene snowy night.

The aroma is fresh and refined, featuring soft floral notes and hints of pear—delicate yet expressive. On the palate, a pure and gentle sweetness unfolds smoothly, followed by a clean, graceful acidity that shapes the finish. With almost no trace of bitterness or off-flavors, this sake offers a beautifully transparent expression of Junmai Daiginjo craftsmanship.

Pairings include white fish sashimi, scallop carpaccio, soft white-rind cheeses, and light appetizers. Its fresh nama character also complements salads and chilled dishes. Serve well-chilled to highlight the pristine clarity that evokes the silence of a winter night.

Staff Recommendation:
A nama sake with fresh vibrancy and Junmai Daiginjo delicacy. Perfect with white fish and cold dishes.
