This junmai ginjo sake embodies harmony between the environment and brewing, crafted using rice cultivated through the “Fuyumizutambo farming method” – a practice of nurturing rice in harmony with nature. This farming technique involves leaving paddy fields flooded throughout winter. It is renowned for enriching the fields by attracting migratory birds and microorganisms, resulting in robust, healthy rice grains. This bottle, ‘Biryoku Fuyumizutambo’, is crafted with generous use of that rice and refined through the meticulous ginjo brewing of Otokoyama Honten.

Poured into a glass, a composed ginjo aroma gently unfurls. On the palate, it impresses with a transparent flavour profile where soft umami harmonises with a crisp acidity.
