A Local Sake for Sashimi – A Taste of San'in to Enjoy with Seafood

As someone from the San'in region, Takayū is a particularly special sake to me, as it is a local favourite from my home region.

A well-loved staple in the area, it is a bottle I would highly recommend enjoying alongside fish dishes.

Rather than being overly light and dry, this sake has a beautifully balanced umami character, while retaining a pleasantly dry finish. One of my favourite pairings is, of course, sashimi.

It works particularly well with fish that have a rich, savoury flavour, such as tuna. The sake brings out the natural umami of the fish, while its crisp finish refreshes the palate.

When enjoying it with raw fish, I recommend serving it chilled. That said, it is also delicious at room temperature or gently warmed, so why not experiment with different serving temperatures depending on the season and the dish?
