3 Japanese Sake Perfectly Paired with Oysters

At TABi TEBAKO, we run a sake shop in Tsukiji with a simple mission:

And in February, one word naturally comes up more than any other :
Oysters.
Oysters that have endured the cold winter sea are firm, plump, and deeply flavorful.
This is the moment when oysters taste most like oysters—
rich, mineral-driven, and quietly powerful.
Naturally, as sake professionals—and as SAKE DIPLOMA holders—
we find ourselves asking one essential question:
“What kind of sake truly brings out the best in oysters?”
Oysters are remarkably expressive.
Depending on the sake you choose, they can feel richer, cleaner, or more refined.

we selected three locally loved Japanese sakes, chosen strictly for their food pairing potential—

(1) Kiminoi Junmai Daiginjo “Eshin” Gohyakumangoku
