1. Kokage no Sakana (Fish in the Shade)

Okayama Prefecture | Kamikokoro Brewery

A low-alcohol sake with a fruity, juicy character.

It offers a refreshing sweet-and-tart flavour, reminiscent of biting into ripe apricots or plums 🍑

2. BLACK SWAN

Kyoto Prefecture | Shirasugi Brewery

A crisp, refreshing acidity created using black koji, more commonly found in shochu production.

Shirasugi Brewery is unique in that they brew sake using table rice rather than traditional sake rice.
This bottle is made with Milky Queen rice — enjoy its distinctive flavour profile.
Surprisingly, it’s also delicious when gently warmed…!

3. Echizen Misaki Prune Junmai Sake

Fukui Prefecture | Tanabe Brewery

A sake that smells just like plum wine…?!

Made using yeast extracted from plums, this unique sake delivers a rich plum aroma while remaining unmistakably sake.
Its flavour pairs beautifully with Western dishes such as carpaccio.
